The Knolls

Located in the modern building designed by architect Norman Foster, The Knolls, our all-day fine dining restaurant, provides an intimate atmosphere with a spectacular view of the South China Sea. We offer unparalleled service and a unique, cultural food affair; guests can partake in family style dining as they sample dishes from menus inspired by the best in international and traditional Singaporean cuisine. Culinary delights from regions around the world are available as well as an extensive array of both international and local a la carte dishes.

Breakfast, lunch and dinner menus include tantalizing combinations of Western, Japanese, Indian and local flavors. Have a leisurely family meal on the terrace overlooking the reflecting pools and distant sea, where our attentive staff will cater to your every whim. You are also welcome to join us for Afternoon Tea featuring more than 30 types of rare and unique teas and savour them with our Colonial English and Peranakan tea-time favourites.

The Knolls Signature Experiences

The Knolls' culinary adventure is highlighted by our selection of The Knolls Signature Experiences. Each experience allows you to sample a selection of dishes from various cuisines around the world. The Knolls Signature menus transport you to different regions of the world with themes from Italy, India and the Land & Sea. Our special experiences include the Land & Sea, a blend of the freshest seafood and perfectly paired meats; The Spice Route featuring Indian dishes layered with complex flavors; and the Italian Experience menu offering Italian classics with traditional flavors and savoury sauces.
The Knolls fosters an intimate dining setting, where families and friends can come together to share dishes from our experience menus. Served in unique, family style portions, The Knolls' Signature Experiences provide a memorable dining experience, perfect for sharing among colleagues and friends.

The Knolls Tea

The Knolls features a specialty bar showcasing over 30 varieties of rare and premium Chinese, English, Indian and Japanese teas complemented by Peranakan and English afternoon tea specialties. The Gryphon Tea Company - which has origins in tea distribution dating back to 1918 - was appointed as the tea consultant for Capella Singapore. Founder, Lim Tian Wee has specially tailored a unique selection of high quality and customised teas for tea lovers.

Grill & Chill At The Knolls

Relax. Chill out. Enjoy the stunning view. Indulge in barbecued seafood and meats prepared a la minute. Buffet includes a selection of Mediterranean appetizers such as the exquisite Serrano ham, local dishes and soufflé desserts. Free-flow of Rosè wine or beer. Buffet is available every Sunday 12:30 - 14:30

Cassia

Cassia, on Sentosa Island, invites you to celebrate the Renaissance in Chinese fine dining. Our modern Chinese restaurant, Cassia, takes inspiration from the age-old spice routes in Southern and Western China and the seas around Singapore. Classics are prepared with full respect towards tradition, where the freshest local ingredients are used to create a feast for the senses. Recipes are based upon traditional, regional cooking and blended with haute Cantonese technique.

Interior designer Andre Fu has developed a warm and inviting dining room, where small, intimate exchanges help flavor the mood while you savor each bite. Transforming the restaurant's 1880s era Colonial building to reflect a modern, sophisticated interior with lush fabrics and a unique blend of warm and cool tones, Andre Fu's design enhances the intimacy of Cassia.

Cassia's intimate dining room overflows onto an outdoor terrace, overlooking verdant gardens and the distant city. Our guests will experience Chinese cuisine at Cassia the way it was meant to be enjoyed. Artfully prepared by Executive Chinese Chef Ooi Soon Lok, each menu from the restaurant has an innovative flair, using the highest quality in technique and ingredients. Authentic flavors and preparations. Organic ingredients. Personalized attention for each table.  

Weekend Dim Sum Brunch At Cassia

Enjoy unlimited servings of your favourite dim sum from a menu of more than 60 dishes, accompanied with exquisite grand cru wines.

Tempting hand-made dim sum selection includes steamed abalone dumplings, Kurobuta pork buns, pan fried bean curd rolls with chicken and goose liver, crispy wasabi mayonnaise prawn dumplings, deep fried squid ball ‘Guilin' style, wok-fried carrot cake with crispy garlic and more. The brunch includes appetisers such as barbecued boneless duckling and fresh mango in lemon sauce, roasted crispy US Berkshire pork belly, Fried Indonesian lobster with crispy garlic in ‘Pi Fung Tang' style, Crispy Chilean seabass in orange sauce and poached ‘live' prawns in Chinese herbs and wine.

Lunch: 12.00 - 14.30 (Daily)

Bob's Bar

Another classic designed by Spin, Bob's Bar features casual bites and tropical drinks. Reminiscent of the Cuban island bars of the 1950s and 60s, Bob's Bar joins Old World charm and classicism with New World sensuality and elegance. Relax indoors and enjoy full-bodied spirits and wines, including premium aged rum from Cuba and the Americas, and Caribbean cigars. Or, step outdoors to the Terrace, and recline in the tropical glow of the setting sun. Guests can lounge on the plush sofas and spacious daybeds, while indulging in fruity drinks, homemade sodas, wines and spirits and Champagne. Bob's Bar is the perfect place to unwind and relax over signature cocktails and libations, all with a view of the sea and the breathtaking Sentosa Island sunset.

Both The Knolls and Cassia prepare dishes for in-room dining, allowing you to enjoy a fine meal on your balcony or by your plunge pool. In-room dining is ideal for spending an intimate evening in the comfort of your own villa or room -- overlooking the South China Sea, city views or our lush gardens as you enjoy the dishes from our modern Singapore restaurants.
